A Nitch in the Kitch...Weekly Recipe- Blackbean Voile'

Blackbean Tortillas, Burgers and Buns in One Recipe
Okay...this one is a winner.  If you are wondering how to make a tortilla that actually folds like a tortilla and doesn't look and act like a flying saucer, well then, I've created a scrumdiliicious recipe for you using potatoes, black beans, egg white and spices.  It also doubles as a nearly vegetarian burger pattie (middle pic).  That's it!  Well, except for my wonderful homemade gluten-free flour blend, that I add for the right consistency. 
Recipe:
1 Cup Shredded potato (skins on) Rinsed well. (Do not pat dry)
1 Cup Black Beans (cooked)
1 egg white
1/4 tsp. Gluten free seasoning mix and salt to taste or 1/8 tsp fine sea salt, 1/4 tsp onion powder, 1 pinch garlic powder (you can add any spices you like).
Approx. 1/8 Cup of All Purpose Gluten-Free Flour (add a little at a time to get right consistency, it may not be necessary to use it all, or you may need a bit more than is called for, depending on the liquid content in the potatoes).


Tortilla:
Put ingredients in a food processor or Ninja (I love anything dressed in black), and pulse until ingredients are well blended.  It will be quite runny, from the potatoes.  Remove blade (if using Ninja) and add 1 Tbsp at a time of any gluten free all purpose flour.  You may have to play with this a bit, but add enough until the consistency is like jam.  In a large preheated and pre-greased skillet, place 1/8 cup of mixture in center.  Slowly spread the mixture around the pan like a pancake until it is the size you desire.  Make sure you get it as thin as possible, approx 1/8 inch or less thick.  Let cook for 1-2 minutes, flip and cook till slightly brown.  Voile, you have your tortilla. 
Burger:
For a burger, you will scoop about 2-3 Tbsp of mixture in center of pan and spread with a silicone spatula till it resembles the size of burger you want, make sure it's no more than 1/4 inch thick.
You can also use these as buns, stuff with greens and eat.
I like to use oil, it makes them crunchier.  Non-stick cooking spray prevents sticking, but doesn't give it the crunch I like.  Try it!
